Golden Puff Sticks
I made the golden puff sticks as I was intrigued by the use of cottage cheese in the pastry. I enjoyed the creamy flavour the cottage cheese brought to it and the toasted walnuts were heavenly. I don’t think my sticks puffed as much as they should, they were more reminiscent of old school cheese straws. We have been nibbling these with blue cheese making for a great combination.
- 4 oz plain flour
- 4 oz cold butter
- 4 oz cottage cheese
- ¼ tsp salt
- 1 egg yolk
- 1 tsp milk
- 2 oz finely chopped walnuts
Sift the flour and salt and cut in the butter with a knife until it is well blended – I used the rubbing in method which was a little tricky due to the high butter content.
Stir in the cottage cheese. Form dough into a loose ball and wrap in cling film/Glad Wrap. Gently press the dough while in the wrapping to firm the pastry up. Chill for at least 30 mins.
On a floured surface roll out the dough into a rectangle. It needs to be about ¼ inch thick. Combine the egg yolk and milk then coat the surface and top with the walnuts.
Neatly cut into small soldiers – recipe calls for 5 inches by ½ inch.
Place on a baking tray and cook in a hot oven until golden brown and slightly puffed.
